University of Connecticut ~ Week 5!

Monday

Nicole and I went to the Union Street Market to work with Ethan Haggerty, the manager of coffee shops on campus. He manages over 5 locations! Because of the rain that seemed to never stop coming down, we discussed a lot about the coffee shops rather than walking all over campus and getting soaked. We did visit and learn how to use the espresso machine at the coffee shop in the Student Union and also visited Up and Atom in a science building.

Tuesday

Nicole and Sarah returned to the Bakery! With the help of Chef Eric Merkle, Nicole and I began working on the show cake for our themed meal. We covered the cake with fondant and began creating figures for the cake. We made surfboards, sea shells and a surfer on a surfboard. Working with the fondant was a challenge, but we worked with one of the Assistant pastry chefs, Megan, who really showed us how to work with the fondant to make pieces for our cake. We also airbrushed flowers, leaves and vines for the second tier of our cake.

Wednesday



 We started our day in Rob Landolphi’s office, where we sat in a meeting with the Assistant Sports Nutritionist Megan Colleto, Steve Shark​is the football dining hall manager​, the football Strength Coach Matt Balis, Sarah Lawless the Director of Football Operations, and some others who were interning and assisting in this project​. Nicole and I listened to what the menu plan was and then Megan said if she liked the option or not. If the option wasn’t a favorite in the past, Rob​, Megan, Steve, and Matt brainstormed for another option. It was interesting to hear what to players like and how they prefer their food to be presented. A lot goes into account when feeding a sports team. Not only healthy options, but also options that the players will actually enjoy. 

Thursday

We worked with Amy Dunham, the Dietitian on campus. We helped her with entering diet analyses into the computer from her students’ food journals. Amy is a very busy person and really appreciated our help. Even though it is the summer, she is still counseling students!


 
Friday
 
We started our day in South with Cheryl Lebeau Radzvilowicz, the health inspector on campus! She first gave us a brief introduction to what she looks for in dining halls when inspecting. She quizzed Nicole and I by bringing out the days menu and asking us what foods may be hazardous. We learned a lot after watching her inspect the dining hall and Cheryl’s attention to detail was great to see in action. After the mock health inspection, we traveled to a branch campus of UConn, Avery Point, where we shadowed Assistant Manager Cheryl Folsom. She gave us a back of house tour of the facility and around campus. It was so beautiful! 



The Weekend!!

      On Friday night we decided that we had to see the biggest Casino in the United States (yes it is in Connecticut, not Vegas!). We arrived at Foxwoods Casino and were overwhelmed with how large the building is. It took us a few minutes to figure out where to go, but once we figured it out we had a great night full of shopping, food and a little bit of gambling.

      Saturday turned out to be the perfect day for an Island adventure!!! We traveled by car and by ferry to arrive at Block Island right off the coast of Rhode Island. After arriving to this small island, we rented bikes and biked all over the Island getting some great pictures and also having a lot of fun too!
