Week 2

Monday

To start our week off, Laura and I are working in Crossroads, a restaurant in the Student Union. We met the manager Gary, who showed us around and introduced us to his wonderful staff! We sat down and went through and talked about all the different aspects of being a successful manager. He really emphasized safety, customer satisfaction, and communication as being the most important aspects. Being so big on safety and cleanliness pays off because they got a 99/100 on their last inspection!! (its impossible to get a 100)

We also talked about Fitter Foods, which is becoming a campus-wide initiative that provides healthy options to students. To qualify as a Fitter Food, items must contain less than 500 calories, less than 15 grams of fat, and lower sodium. Gary gave us a small assignment to come up with three different recipes to try that could qualify as Fitter Food items.

After work, Laura and I did our usual dinner and gym routine, then went home to watch Oceans 12.

Tuesday

Today we were back at Crossroads with Gary, where we spent the majority of the day working putting their ice cream menu online and getting the prices for everything. We used the US foods website find all the products and their item numbers, then put in the different menu items accordingly to find prices for the upcoming fall semester. We briefly got introduced to CBORD, which they use to keep track of inventory. Gary took a look at our three recipes for the Fitter Foods and he said he can't wait to try them out! We came up with a "Si Racha n' Eggs on Toast" which is 2 slices of whole wheat toast, avocado, tomato, a fried egg, garlic powder, and Sriracha sauce, which Laura and I LOVE! Our second recipe is "Apple n' Bacon,' whole wheat toast, peanut butter, apple slices, and turkey bacon. For our third recipe we came up with the "Skinny Pizza Wrap" which is a tortilla, marinara sauce, mozzarella cheese, mushrooms, and pepperoni.

After work, again we did our usual routine and called it a day!

Wednesday

Today we worked at Couch, the main dining hall on campus. It has 14 different options to choose from, including a stir fry station, barbecue, vegan and vegetarian dishes, home cooking, a smoothie and frozen yogurt bar, and an all-you-can-eat Chick-fil-A!

We spent the morning with the manager Sam Ford, who went over his duties and talked about inventory, where we worked for a little, marking the boxes of dry goods the dates they were received. We also were able to sit in on an interview which was very interesting! It was nice to be on the other side of things, sitting and observing the interviewee!

After a salad for lunch in the Union Market, we worked with Stephanie for a little, who comes up with allergy-free recipes and prepares them. The future goal is to have a station available for students that is completely free of the top 8 allergens. Then we spent the rest of the day just helping out where we could with prepping different salads and lunch meats for the salad bar at dinner.
