University of Oklahoma

Week 1: 

May 29-May 31 


Hiya! My name is Laura Cresta and I will be a senior next year  at Penn State University studying Dietetics.

My name is Jenica Miller and I will be a senior next year at Lasalle University, where I play field hockey, and am studying Dietetics.

For both of us being from Pennsylvania, flying over to Oklahoma for our internship is definitely a new experience! We already noticed the flat land, the stratus clouds, and the vast farmland around. So far, everyone is very friendly and is willing to give us great suggestions regarding the best places to eat, the attractions we should visit, and which bars to go to and which to avoid!
Maybe we will buy ourselves cowboy boots? And then a flower dress to fit in with the rest of the girls? Who knows! Lol. We are looking forward to this type of culture to experience as we have never been to the midwest before.



We arrived here Friday and got ourselves all moved into our apartment, located on campus. It includes a kitchen, family room, 2 bedrooms, and our own bathrooms! We thought we would experience rain and tornadoes during our time here, but so far it's been nothing but sunny skies.
Friday night we went to main street with my mom who flew in with us and got burgers from The Garage--best burgers we ever had probably. Later we explored Campus Corner [right off of the University's campus], and went to Chimy's for margaritas. (We met Glenn Campbell's cousin this night!!)

Saturday we decided to trek over to Bricktown in Oklahoma City which was beautiful. First we went to a place called Captain Norm's Dockside Bar. It was a beautiful day so we sat outside on their colorful glider benches and ordered Pina Coladas.


After, we got lunch at Tapwerks and ordered Fried Pickles. I got an Anderson Valley Oatmeal Stout and Jenica ordered the Anthem Golden One beer which was brewed in Oklahoma City! They have over 100 beers on tap!!
Next, we went to the Bombing Memorial which was very serene.




After that we went to Mickey Mantle's which was very modern and chic. We sat in the lounge area and ordered fried asparagus and salads and listened to live music--it was very relaxing!

Sunday--Jenica and I decided to go for a run and familiarize ourselves with the campus! Even going to a huge school like Penn State, this campus is definitely very big and spread out. The stadium is smack dab center of the campus--clearly they are big about football here!



DAY 1: June 1st

Jenica and I woke up at 7am, had our morning coffee and breakfast. We then started our 20 minute walk to the Walker Building, where we were to meet Dot, our intern director, at 8:30am. We first filled out a bunch of paperwork to get ourselves into the University's system. After that, we met 2 other students that worked with the Nutrition office. They helped us get familiarized with the computers and we were able to review past NACUFS intern's projects from previous years. We then got our ID's, and then headed over to Crossroads, an on campus dining area, for lunch. Jenica and I were both craving a panini and went with the Veggie Panini which had spinach, onions, tomatoes, bell peppers, banana peppers, mushrooms, and hummus--it was very good!!
Dot then briefly went through our main projects that we will complete during the duration of our internship: a business plan, a recipe project, and our in-service project.
After that, we actually started to plan out our business plan and before you know it, it was 5pm and time for our daily run around campus.
