UGA Week 6!

Monday (6/6)

Today was such a fun day working with the Freshman College Opening Banquet! I started off the day making flower arrangements for all the tables; we made over 100 arrangements!

Bread Prep
Next, I was tasked on food prep. First, Chef had me slicing French bread and Pita Bread. The slices were coated with an Extra Virgin Olive Oil mixture and popped in the oven until lightly crisped….
They looked so good! Then I worked on dicing some tomatoes for a topping for a salmon dish.
After I was finished in the kitchen, I helped set up the dining room. I helped make the larger flower bouquets, move tables around, and set the tables. All the work paid off in the end, the space looked beautiful!

The Freshman College group came in around 6pm and took their seats. They came up to the main line based on table number; my job during this time was to call to runners what was needed from the kitchen. This ensured that all the food on the line was full and that everything looked good. It was a rush but so much fun!

When the group left we were able to take a break and try some of the delicious food (my favorite was the Strawberry Feta salad – yum!). We then bused the tables and started putting the room back to the way it was. I had a lot of fun tonight and it helped me to picture what our event will look like in a few weeks! Now onto finalizing the closing banquet!

Tuesday (6/7)

Project workday! I spent today camped out in O’House working on the two summer projects. I was able to ask questions and get a lot done. Today was a very productive day!

Wednesday (6/8)

The day started off in O’House finalizing the decorations for the closing banquet. We first went down to the basement where all the decorations are stored to see what is initially available to us. After that, we sat down and came up with a blueprint for how we were going to decorate our event. In doing this we were able to write our shopping list for what we still had to pick up at the store. We started at the flower shop where we picked out what flowers we wanted to decorate with. It was amazing how many different types of flowers there were! We then moved on to pick up the rest of the decorations as well as props for our photo booth!
Once we got back from shopping we went over to Central where Stuart went through the weekly production run in Food Pro. It was really neat to see how much information is brought through Food Pro from the dining halls to this one central location.

Thursday (6/9)

I spent today with Nicole Lovely, an opening manager in Bolton! Our main focus today was working on weekly payroll, mainly student payroll. We went through to check and make sure no one went over 20 hours a week worked and correcting clock in or clock out times. After approving all of the student’s times we looked at full time payroll. Since they approve the full time employee payroll next week, today we just went through and added in the time people requested off, either vacation time or sick leave.
For the rest of the day she went over her job as a manager; this included handling problems that come up during a shift and how she handles conflicts with employees.


Friday (6/10)

Today was a project workday so Florence and I spent the day in the kitchen testing some of our Grab and Go recipes. I prepped a chicken lettuce bowl with a vinaigrette dressing as well as a gluten free pasta salad. It all looked delicious! We are letting it sit over the weekend and will hopefully try them Monday!

It’s the weekend!

I started off this weekend going to Speakeasy, a restaurant downtown Athens (there seems to be a theme this summer). It is a tapas restaurant so they bring out many small dishes and you are able to try a little bit of each. The food there was amazing!! If I were to recommend one thing it would be the Pork Belly with Grits, it was a melt in your mouth dish. It was an overall excellent meal.
The next day I went hiking with a friend from town. We drove up to North Georgia and climbed up Blood Mountain. We hiked 6 miles in total and the view was definitely worth it! It was rainy that day
so we couldn’t see very far but the view was still gorgeous. I was told that on a very clear day you are able to see Atlanta from the top of the mountain. It was a great hike and a fun day!


I can't believe we only have two and a half weeks left summer is going by too fast!
