The week went by quickly, not only because it was a 4 day week, but we were also able to visit different operations everyday!
Monday (6/29)

We got to know Dave well and he talked to us about how we were liking Oklahoma and everything we were doing. He also set up for us to go into Oklahoma City to the HSC campus at the cancer center to work there, which we heard had been a great experience!
Tuesday (6/30)
This morning we worked in the Union Market, a small area that has a hot bar, salad bar, and grab n go items. We worked with Jen, who does the hot bar. She was very welcoming and helpful in telling us what she does and showing us recipes and the things she does everyday. Today on the hot bar they were serving a German menu, consisting of a cabbage dish, different sausages, potatoes, and soft pretzels. She is has been working all around campus so is just beginning to try out these recipes. During the afternoon she changes and modifies items if she thinks they need it.
Wednesday (7/1)
We were in the Union again this morning, working at the Laughing Tomato with Carren. She has been here since the operation first opened, so we could see the pride she took in everything she does for it! We were only there in the morning to see how things ran, and we were also able to try making a new vegetarian option for her menu.
We made a wrap with chipotle mayo, black beans, rice, artichokes, sun dried tomatoes, red bell peppers, and spinach!

We also quickly got to meet Ali Thomas, who is head of the HSC campus to set up days that we are able to drive up and work with them.
Thursday (7/2)
We were both super excited for today to go to the Stevenson Cancer Center to work at Healthy Hearth!

We met the Ben, the manager of Healthy Hearth, and he showed us around the kitchen. Then we met Lara, who is the baker, and Abbey, one of the cooks, and we mainly worked with both of them for the day. We saw Lara prepare all her deserts for lunchtime, which included cupcakes and giant cookies that looked and smelled amazing! She has had a festive blondie bar for the 4th of July that had blueberries, raisins, and chocolate chips in it. After spending the morning with her, we had lunch. We split a turkey avocado sandwich and had a side of broccoli and tomato basil soup, all of which were delicious (pictured below)!
