Wyoming Week 5!

This week we worked mostly with Becce and Matthew doing a lot of food testing for Washakie.  On Monday, we spent the whole day cutting herbs, vegetables, and fruits to see if their yields were correct in CBORD.  We were trying to find the correct amount of waste lost for each type of food to make the current recipes more accurate.  We found that some were pretty close, but some were way off.  The rosemary said it had 100% yield and after our test we only got a 20% yield.  That's a big difference that would make a huge difference in the taste of the food.

The rest of the week we did a bunch of product/recipe testing! We tested, couscous, wild rice, ribs, hamburgers, mushroom burgers, and different pizza doughs!  Everyone in the kitchen had a lot of fun with the testing.  My personal favorite was testing the mushroom burgers vs. the regular burgers.  It was very interesting to see the texture and taste difference between the two.  I have to say though, I still prefer the 100% beef burger.  We also tried 5 different sriracha mayo recipes for Washakie to use in the future.  It was interesting because all of the recipes had very different ingredients and tastes!

This weekend, Olivia and I split up.  I got to go see one of my friends in high school who lives in Denver.  I haven't seen her in years so it was really great!  We went to a local barbecue and hung out with friends, checked out the shopping in downtown Denver, hung out by the pool, and finished the weekend off with a trip to a famous ice cream place.  My friend Taylor and I, grew up in Rhode Island.  Summer in Rhode Island is not complete with out lots of coffee and ice cream.  We drove to downtown Denver to go to Little Man Ice cream.  We had to wait in line for an hour just to get a couple scoops!  The reviews were right it was worth it!
