University of Oklahoma -- Final Week

Week 8: Final Week of Internship

It's our last week here in Oklahoma! We can't believe it.

This week we were able to spend 2 days at Starbucks on campus. The staff was so friendly and we learned more about coffee than we ever thought we would. Chris Kaesar, the manager, talked us through coffee taste testings. It was actually very interesting and required us to really dig deep into our five senses. We now have a coffee passport booklet that we can look to as a reference.

Nutrition stuff

Jenica and I also went ahead and took initiative to head over to Harold Hamm Diabetes Center in Oklahoma City earlier this week. We were able to talk to 2 Registered Dietitians which was really nice. They talked about what they encounter as Dietitians in a Diabetes Center.


The Dietitians:

Lacey Bixler is a Clinical Trials Manager, which was a different aspect of nutrition to hear about. She describes it as a fast-paced job where she has the opportunity to discover new drugs and the side affects that may occur with those drugs. She also mentioned that she likes that she is able to develop relationships with the patients and children in the Diabetes Center.

Dianne Brown is a Diabetes Educator at the Harold Hamm Diabetes Center. Her job consists of a lot of educating to patients newly diagnosed with Diabetes. She holds support groups, does behavioral health screenings, holds individual consultations, deals with gestational diabetes, and more! She also talked to us about how the bionic pancreas works, as well as the new fast-acting insulin gadgets that are coming out. She was very intelligent.

To conclude: 

Jenica and I both agreed that we grew as individuals during this internship and learned a lot about ourselves. We are grateful for the experience we had at the University. We feel ready to apply our knowledge in the nutrition field.

Jenica's future goals:

  • To complete DI at Lasalle University, pass the RD exam, become a Sports Dietitian and eventually get into private practice.
  • Favorite workouts: running, kickboxing
  • Favorite food: tacos

Laura's future goals:

  • To complete DI at desired program, pass the RD exam, start out in clinical dietetics and eventually get into health and wellness nutrition ~ Sports Dietitian or big wellness program
  • Favorite workouts: kickboxing, yoga, Stairmaster
  • Favorite food: spaghetti
